There's really nothing like coming home from a long day at school, putting some Ray Charles on and making a good meal. I love cooking mussels - it's so much simpler than most would expect.
I just chop up garlic (the more the better), chilli, and fresh herbs like coriander / basil, and make sure to pick up a bottle of Sauvignon Blanc from the liquor store. I usually buy 1kg of mussels, 2-3kg if we're cooking for a party and a loaf of ciabatta to dip with the remaining sauce. Yum!
Here, I've paired it with a light fruit salad with baby spinach, mandarin oranges, strawberries, avocado and pesto ham.

The only part that I dislike about cooking mussels is the cleaning - you have to give the mussels a good clean before cooking them and it's a real pain in the ass. But since when has anything worth it ever come easy, eh?
